Pai Mu Tan, also known as Bai Mu Dan or White Peony tea, comes from Fujian province in China. Pai Mu Tan is a delicate white tea with a sweet, lasting flavour. The calming, floral aroma may have hints of peony and the pale green/yellow liquid is a joy to behold. Pai Mu Tan is one of the highest quality white teas, with grey-green downy leaves that are naturally withered and dried in the sun. Pai Mu tan tea is picked in the spring, between mid-March and mid-April. It should be picked on dry days, and only the top two leaves and a bud from stems that are neither too short nor too long. Delicate and seductively sweet.

Fujian province in south-eastern China lies across the sea from Taiwan (in fact some parts of Fujian are administered by Taiwan, and Taiwan used to be a part of Fujian) and is home to 35 million people. Fujian is a mountainous province, which has made Fujian isolated throughout its history, particularly bordered by the Wuyi mountains to the north (Mount Wuyi is a UNESCO World Heritage Site). Fujian has a subtropical climate, with an average annual temperature of 18 degrees. [WFL90510]
