A white tea of first class quality, made of large, unrolled, light green leaves with tippy buds. Pai Mu Tan, also known as Bai Mu Dan or White Peony tea, comes from Fujian province in China. Pai Mu Tan is a delicate white tea with a sweet, lasting flavour. The calming, floral aroma may have hints of peony and the pale green/yellow liquid is a joy to behold. Pai Mu Tan is one of the highest quality white teas, with grey-green downy leaves that are naturally withered and dried in the sun. Pai Mu tan tea is picked in the spring, between mid-March and mid-April. It should be picked on dry days, and only the top two leaves and a bud from stems that are neither too short nor too long.


Fujian province in south-eastern China lies across the sea from Taiwan (in fact some parts of Fujian are administered by Taiwan, and Taiwan used to be a part of Fujian) and is home to 35 million people. Fujian is a mountainous province, which has made Fujian isolated throughout its history, particularly bordered by the Wuyi mountains to the north (Mount Wuyi is a UNESCO World Heritage Site).
