Middle Sencha quality, harvested from the slopes of Mount Fuji. Sencha is produced not through fermentation but is rather immediatly steamed to prevent fermentation, and this seals in the flavour. The leaves are then fluffed with hot air, pressed, and dried until only 3% of their original water remains. After extensive rolling they achieve the shape of fine needles. Mount Fuji's harvest iin late April produces 'Shincha' tea, when the leaves are at their tenderest and produce the highest quality tea.
